October 1st, 2012 at 06:43 pm

The pot roast did not go in at the right time yesterday so we ended up just eating leftover homemade pizza and leftover homemade chicken noodle soup. That bumps the pot roast to tonight.

Monday--
Pot roast
Baked potatoes
Green beans
Prunes

Tuesday--
Picnic ham
Kohlrabi
Drop biscuits with homemade jam of choice

Wednesday--
Baked potato soup
Cole slaw
Frozen berry smoothie

Thursday--
Chicken Stir-fry with lots of veggies
Pears

Friday--
Homemade pizza with homemade sausage, ham, bell peppers, onions, and pepperoni
Cole slaw

Saturday--
Pork chops
Fried potatoes
Green beans
Pear sauce

Sunday--
Leftovers (and if no leftovers, pancakes and ham)

I can never 'right size' pot roast so by Tues. I make a 'Planover' since everyone here seems to dislike leftovers. This week we'll have Beef Stroganoff and likely Lentil soup if we get the bad weather forecasted later in the week. I've never frozen cooked Lentils but will try your freeze it in a jar method. If it goes to mush I figure I'll give it a whizz with the stick blender and add fresh spices.

I had to switch out a meal because I forgot to soak & cook beans this weekend. It's nice to have the flexibility of some faster meals and some that take more times, huh?

Snafu--Just remember that if you freeze it in a jar you need to leave at least a couple of inches for expansion or your jar will crack.

CJ--Definitely. It makes all the difference in the world if you can just swap things around to a different day when there's more time.
