Salmon Patties

I so did not want to make a big production over dinner tonight. I had a huge case of the lazies. So I made salmon patties. I don't use bread crumbs or crackers like many people do, I use parmesan. Everything was on hand in the pantry or fridge So here's my recipe.

3 6 ounce cans of pink salmon
3 scallions, chopped, both white and green parts
2 jumbo eggs
3 tsp minced garlic (from the jar)
1/2 cup parmesan cheese (not from the green can, freshly grated)

Mix it all up, form it into patties, fry in olive oil over medium heat (turning once) until done. Simple, easy, took all of 5 minutes, if that, to prepare and not much more than that to cook. Add a can of green beans and you have a meal. Well, we have a meal, we eat big at lunch, light at dinner. But I suppose you could add a roll and a fruit if you wanted or some other sides.

    I occasionally use parmesan, too, rather than crumbs. Your recipe is very much like mine. They're so good with the cheese and some spices!

    I will definitely check out your version next time - sounds so yummy with the garlic and parmesan - we are garlic bread friends so we always have fresh garlic and parmesan on hand!!

    Hey thanks! I actually have a huge salmon steak thawing in my fridge right now. It was a freebie from a guy at work. I am going to use half of it for one recipe and I think I'll use the rest for your patties. Your recipe is great because I follow a gluten-free diet and can't have the bread crumbs.

    I'm glad you guys like the sound of it. It also works with canned tuna or canned mackeral.

    Daylily--I also have a meatloaf I make with no bread or crackers. I'll post it later.
