What's Your Favorite Go To Dinner?

Hey, everyone. I am getting kind of bored or in a rut with what I've been making for dinner lately, so I thought I'd ask you all what your favorite go to meal is, the recipe (or lack of recipe) you pull out when you are tired and cranky and know it will please everyone in the family (or just you, if it is just you). Something that is pretty easy to make, not terribly expensive, but still tastes great.

If you could either put a link to the recipe in the comments or leave a recipe in the comments, I'd be thrilled. My only two issues are I am allergic to mushrooms (so no dumping a can of cream of mushroom soup on anything) and almonds.

Editing to Add: No one here eats beans, either, so if any other ideas are posted, bean free ones would be better.

    I haven't made it in a while but it's my go to recipe, although I half the recipe, sometimes even less. It's good for leftovers here.

    When I'm supertired and I want dinner fast, I make cheese quesadillas. Just tortillas with shredded cheese, folded and grilled in a frying pan with no fat. If I have something on hand to toss in, like cooked peppers or onion, I do that. Serve with a small cup of salsa for dipping.

    Turkey chili is probably my easiest dinner. Brown a package of turkey (I think the ones we get are 20 oz.), then add one can of Bush's Chili Magic (I prefer Traditional), one can of Brooks' Chili Hot Beans, one can of chili-ready diced tomatoes and one can of plain diced tomatoes. Stir and cook at a medium boil until it thickens. (But I like my chili thick and not too spicy -- you could cook less for thinner chili, use two cans of chili-ready tomatoes or add chili powder if you like it spicier, etc.) If I have garnishes I'll use Fritos, shredded cheese and sour cream. Lately we've been added a can of pineapple chunks (with the juice) -- surprisingly good!

    My favorite is probably chicken stew, but it's a little more labor-intensive. It's 1-1.5 lbs chicken, cut into cubes, 3 potatoes, cubed, one onion and one green pepper, diced, a large can (I think 28 oz) of stewed tomatoes, 4 cups chicken broth, a can of corn, and we add a can of mushrooms but you could easily leave those out. Brown the chicken with a little seasoning (I just use Lawry's seasoned salt). I do this all in one big soup pot; I used to brown the chicken separately but that just dirtied another pan. When the chicken is done dump in everything else and cook at a medium boil until the potatoes are at the desired tenderness. You can do lots of customization with this, of course, depending on the veggies you like. You could also simmer it and cook it longer -- same for the chili -- but I don't usually have that kind of time. Either would probably work well in a crock pot, too.

    Dice a whole onion and throw in a frying pan on a medium to soften. Throw in a heaping tablespoon of finely chopped garlic. Mix in a pound of browned ground beef or ground pork or ground turkey (or in your case ground rabbit). Add a 19 oz can of tomato sauce and add your favourite herbs. I add pepper and a bit of chili powder. I've added a taco seasoning package in previous versions. Mix and pour over cooked elbow noodles. Mix and pop in the over at 350 for 20 minutes. Serve topped with parmesan. Hearty!

    I have several portions of tomato soup in my deep freezer, so our go-to meal is grilled cheese and tomato soup. Or the kids new favorite - english muffin pizzas! They had a fantastic sale on english muffins this week and I stocked up on 5 bags and put them in the freezer. I also love lean pockets and always keep a couple of boxes in the freezer.

    Parsley breadcrumb pasta...cube about a cup of bread into small pieces and crisp up in a pan with a T of olive oil or more. Chop a small bunch of flat leaf parsley and mince about 4 garlic cloves. Cook 1 lb spaghetti and, while it's cooking, warm 1/3 cup olive oil with the garlic over low heat until the garlic just starts to turn color.

    Toss the garlic & oil with the pasta, the parsley and some salt & pepper. Divide onto plates and sprinkle with the breadcrumbs.

    Golden tofu, served with rice and broccoli (or whatever veg is handy). Press tofu, slice into 8 (or whatever) pieces, and fry in peanut or canola oil until crispy on both sides. Take out of pan and drain. Then add mixture of 3T brown sugar & 3T soy sauce to the pan and stir together. Add tofu back in and cook for a couple minutes until the sugar-soy mixture starts to coat it with a rich caramel color. Turn off heat and let it thicken a bit before serving.

    I agree with PB&Js and quesadillas, also grilled cheese sandwiches and French toast. I don't eat it myself because I'm vegan, but I do a dead simple French toast for the kids most Saturday mornings that they love; 2 eggs & 2 T milk for 3 pieces of bread. Heat butter in the pan, dip bread in the egg/milk mixture, then fry in butter. I add dabs of butter to the top of each so when I turn them over they have enough butter to get a nice crisp exterior. And serve w/maple syrup. 5 ingredients counting the syrup!

    pasta salad- your choice of pasta and mix-ins-protein, veggies -raw or cooked, dressing- i have done this as a "salad bar"-everyone gets a bowl and puts in whatever they want-great way to use up leftovers

    Mine is usually breakfast: french toast, eggs, toast, maybe fry up a small potato, bake a strip of two of bacon (or extra for a sandwich ror lunch so easy to bake bacon instead of fry), cereal, pbj sandwich, soup, enchiladas with sauce i already made and froze in servings for two enchiladas-take 5 minutes to roll and toss in oven for 10 minutes.

    this was a great topic because I am very bored with all the meals I cook.

    I make black bean tacos. I cook a crock pot full of black beans then place about 2 cups in baggies with a little juice. Then you can freeze it. That way it thaws fast and just add whatever you like on tacos.

    I have a bunch.
    Pasta w/microwaved veggies and jared red sauce, pesto or olive oil & garlic.

    Soup from a box with veggies (fresh or frozen) and diced leftover chicken. Summer version: salad with cooked diced chicken or tuna and all the fresh veg I have on hand.

    Something I batch cooked in my freezer

    Frozen pizza
    hot dogs
    eggs on toast
    PB on an english muffin
    cheese on rye or english

    Stir fry- put rice noodles (or regular pasta) on to boil. Meanwhile saute frozen broccoli, garlic, fresh ginger, and either baby corn or sliced water chestnuts, sprinkled with garlic salt, cayenne pepper (if you like heat!), and ginger powder. When pasta is ready, drain it, add a little olive oil and season with garlic salt, pepper, and ginger powder also, then dump into frying pan with veggies and mix through. At the end I like to add egg whites to the whole mixture and stir for another minute until the egg is cooked. Mmmmm. Eat this all the time, and it is super easy and quick. You can also add soy sauce to the pasta if desired, and if I happen to have fresh cilantro in the fridge, that is an awesome touch. I don't eat much meat, but this would be probably go very well with shrimp for additional protein. If sodium is an issue for your family, that fake salt would probably work also.

    -omlettes or French toast, eggs on toast

    -potato pancakes, which I mix up quickly by making an instant mashed potato packet, then seasoning it, dipping in egg, coating with panko, and frying. I like to add broccoli or carrot slivers for some nutrition

    For a bean free and no cook option I go for Greek yogurt. I buy the plain kind on sale and then add my own sweetener, nuts, fruit, cinnamon, or whatever I want. If I don't want a sweet dinner then I stir in one of those ranch dressing or green onion dip mixes, grab some carrots, and voila.

    Sweet and sour pork chops (loin) or boneless chicken. Brown meat in a skillet with a little bit of olive oil, while browning whisk together 3/4 cup of brown sugar, a can of condensed tomato soup, a tsp. of Italian seasoning, 2 tbsp. of white vinegar and 2 tbsp. of Worcestershire sauce. Add to the meat and cook on low for about 20 minutes and serve over a bed of white rice. I've never had rabbit but if it's anything like chicken, I bet you can probably use it too!
