    Oh, you are getting it DONE! Good job. Don't they all look beautiful! Is anyone helping you with all the scrubbing washing, cutting, boiling, ladling, capping, lifting, timing, lifting again, clean-up, packing away? How many jars can you generally do in one day? What size canner? Raw pack, hot pack, or both?

    Joan, yes, I have some help. My mother is helping with things like shucking and peeling and cutting. My son lifts the canners onto the stove for me and puts them away again afterwards and helps with washing and snapping beans. My daughter was helping until her accident. We have 3 different canners. One is a water bath canner which will hold 9 quart jars or 10 pint jars and is for high acid fruits. Then we have two All American pressure canners. One holds 8 quart jars. The other is a tall one so you can do two layers of 7 quart jars or 3 layers of 9 pint jars. I do both raw and hot pack depending on the item. Corn was raw pack, so were green beans, while nectarines and potatoes were hot pack. I usually only can one thing a day because that is about all my body can stand and it is exhausting and heats up the house. We try to get it done in the morning so that the house is still cool when we do it.

    LR, I never would have thought I'd want the canner that does 14 quarts, but now I wish I had it. Those All-Americans are built like tanks and weigh as much, too! I picked 40 pounds of tomatoes today, for a total of 200 this summer. Green beans just started bearing yesterday, so we canned 8 pints today, then turned to tomatoes.
