Meal Planning for the Week

January 21st, 2013 at 06:26 am

I've got a few things in my freezer I want to use up this week, a duck and some steaks. I also have quite a bit of cabbage so cole slaw or cooked shreds will be heavy in the menus this week. Also we have 8 dozen eggs in the fridge right now, so that will play into my menus as well. And the only fruit I have on hand is oranges and one can of pears, so not a lot of variety on that count.

Monday--
Grilled steaks
Fried potatoes
Cole slaw
Oranges

Tuesday--
Pancakes
Scrambled Eggs
Lightly fried cabbage and onion shreds
Oranges

Wednesday--
Fried rabbit
Baked potatoes
Green Beans
Oranges

Thursday--
Spaghetti with homemade sauce
Beef and pork meatballs
Garlic bread
Cole slaw

Friday--
Pizza with leftover spaghetti sauce, shredded leftover meatballs, pepperoni, onions, and (frozen) bell pepper strips
Salad

Saturday--
Lamb de provence patties
Fried potatoes
Cole slaw
Oranges

Sunday--
Roasted duck
Baked potatoes and carrots
Broccoli
Oranges

Breakfast this week will be omelets, sausage, bacon, pancakes. Lunches will be meatloaf, crockpotted turkey, turkey quesadillas, and shredded cabbage or salad.

Wow, eight dozen eggs?! I fear that'd lead to lots of egg salad sandwiches at my house... well, or omelettes. You must have had a good deal on them. I haven't had rabbit in a long time, not since I was in Germany. Good stuff. Nice that you have some insurance that you can get through the items in your freezer, that is the whole reason it is there!

No good deal, just 12 chickens in the back yard that lay between 6 and 12 eggs a day. It adds up fast.

You probably already know this but you can crack those eggs into ice cube trays then dump them into a gallon sized ziploc to keep in the freezer then when you need some eggs put the ice cubs in a bowl in the frige to thaw. Are you selling those eggs or are they just for your family's use?

I know you can freeze them, but with such a steady supply of fresh, there doesn't seem to be much point. Mostly we give the extra away. There is one lady who insists on paying $3 a dozen to help pay for feed. If I ever get set up in a real farm type situation I would likely put a sign up front with eggs for sale.
