Meal Planning

Since I can't sleep, I figured I might as post the week's meal planning.

Monday--
Pizza (this was supposed to be Sunday, but we ended up having homemade bacon burgers with thick slices of onion instead, so good) with pepperoni, ham, red bell peppers, and yellow onions.
Cole slaw

Tuesday--
Roast chicken
Baked potatoes
Green beans
Watermelon

Wednesday--
Tacos
Italian prunes

Thursday--
Loaded baked potato soup
Fresh baked bread with butter and homemade jam
Green beans

Friday--
Bacon cheeseburgers
Homemade French fries
Salad
watermelon

Saturday--
Braided chili loaf
Galia Melon
Coleslaw

Sunday--
Pot roast
Mashed potatoes and gravy
Green beans
Whatever leftover fruit there is

    I'm a big fan of your menu planning for a lot of reasons but I wonder whether baked potato, potato soup,french fries, mashed potato nearly daily impacts your health issues. If everyone else eats high glycemic [whites] do you substitute something else?

    I only eat high carbs one meal a day unless I am sick. That meal is dinner and I am careful to balance it with one protein, low carb veggies, one high carb starch, and a fruit. Except maybe pizza day is a bit unbalanced but I count red peppers and tomatoes as fruit. Lunch is a low carb vegetable and protein (some kind of salad with meat) and so is breakfast (usually duck eggs and cucumbers). My daughter eats like I do. This week just happens to be heavy on potatoes because I am trying to use some up before they go sprouty. But even the baked potato soup uses a full pound of meat in it so it is not as unbalanced as it first looks. My bread is homemade from organic whole wheat and white flour mixed and my pizza dough is homemade from organic white flour. It is a careful balance, but believe me I take all of our health issues into account when I make my food menues.

    Love seeing other people's menus for inspiration! I am a vegetarian except for seafood, but tacos (with rice and beans instead of beef) and italian plums sound delicious!
