Meal Planning

I forgot to post my meal-planning for the week. Things got a little topsy-turvy anyway on Sunday because I forgot to put the roast in the crockpot so we ended up having roast chicken on Sunday and pot roast tonight. But I really ought to post the rest of my meal plan for the week because I find without the accountability it is far too easy to go "Screw it, let's go out." And I figure tomorrow especially since I will be canning all day I don't want to go without a plan. So...

Tuesday--
Bacon cheeseburgers
Homemade french fries
Coleslaw
Blackberries and blueberries

Wednesday--
Porkchops
Daikon Medallions
Corn on the cob
Drop biscuits with homemade apricot jam

Thursday--
Carne Asada (from this recipe:

Oven baked chicken
Baked potatoes
Broccoli/Cauliflower
Drop biscuits wtih homemade strawberry jam

Saturday--
Nachos (tortilla chips, taco meat, cheese, salsa)
Salad
Cantaloupe

Sunday--
Beef chuck pot roast
Mashed potatoes and gravy
Green beans
Berries

    I too appreciate your weekly meal plan and we must have a plan as I hate that 5 PM what's for dinner feeling of panic. On busy days when I know I'll be tired by meal time I usually plan and prep a crock pot dinner or casserole/one pot that can be assembled in the early AM and just slid in the oven an hour before it's needed at table.

    It's been unusually hot here so meals have been centered around salad with some protein [meat/fish/tofu] chunks centered. Fresh fruit smoothies or jello or ice cream/fz. yogurt/sherbert are the preferred 'afters.'

    I am with you on the planning...if I don't have a plan, it is harder to make myself fix dinner. You have some great menus...what time is dinner? LOL
