What are Your Favorite Low Cost Meals with Meat?

January 18th, 2012 at 12:13 am

I am getting bored with my usual repertoire of recipes and though I have spent a couple hours searching for cheap meals that include meat, I still keep running up against a lot of vegetarian recipes. It's like the search engine has been programmed by the beans and lentils industry. Which is fine when that's what you want to eat (or you like them, which I don't), but not so much when you want your beef, pork, eggs, cheese, poultry or fish. So I thought I'd ask, what are your go to and preferrably flavorful recipes that include meat but are also low cost?

Fritatta for sure. Spray a large frying pan with PAM. Jack up the heat on the pan. Fry up some onions/red peppers/mushrooms - what ever you have in your fridge. Whisk up 6, 8 or 10 eggs. Take the vegetables out of the pan, rinse the pan and respray. Pour in the eggs and allow them to cook slightly. Throw in the vegetables and any cheddar cheese or feta. Allow to firm up, add salt and pepper to taste. Serve. Easy, fast, cheap, and good eating!

Quiche, or egg casserole dishes and you can include the meat you want.

Or how about chicken and noodles?

Of course any kind of tomato sauce you can make with hamburger or sausage, and not a lot of it and serve it over pasta.

I find that if I cut up the meat into smaller pieces to add to the dish, I end up eating less meat. Example: I cut two breasts of chicken into small cubes to make chicken fried rice. We end up with leftovers, but If I bake two breasts, we eat it all. It's all psychological.

I made that pork shoulder/butt roast recipe from the New York Times (Sunday). It was the bomb, especially with the green onion ginger sauce.

Turkey meatloaf. Use ground turkey instead of ground beef, ground-up corn taco shells instead of bread crumbs, salsa instead of ketchup. Pretty darn good!
