Day Two No Eating Out Challenge

I am happy about how good the kids are being about not eating out. I told them we were going to try to go two weeks with just homecooked meals and they are actually pretty happy about that. Seems they really do prefer my cooking and it's more an issue of my not wanting to cook at times more than them wanting to go to a restaurant that makes them ask so much. Interesting what your kids will tell you when things slow down in the summer.

Anyway, today's menu:

Breakfast
French toast with powdered sugar and cinnamon ($1)
Milk ($1.50)
Chicken sausage ($2)

Total: $4.50

Lunch:
Clam Chowder ($1.49)
Chicken Noodle soup ($1)
Canteloupe ($1)
Cucumbers ($.79)
Cheese cubes ($1.50)

Total: $5.78

Dinner:
Beef pot roast ($7.52)
Corn on the cob ($2)
Green beans ($1)
Milk ($1.50)

Total: $12.02

Grand Total for day: $22.30. A little high but there will be leftover pot roast for sandwiches tomorrow so that will bring tomorrow's price down.

It is getting harder to find the pot roasts for under $3 a pound. Until all this medical stuff started this year I was seriously considering getting a side of beef direct from an organic farmer but we may well likely have to put that off for another year since I don't think we will have the money available by September which is when you have to pay.

    you and DKs can have a fun time cooking together even though it takes longer and will likely be messier. Great learning experience for you all, kids improve math skills as an extra benefit. We use crockpot/slo cooker when it's hot to keep the place cool they all had making root beer for the July long weekend. I remember the day they carefully explained to girl friends about the difference between BBQ and grilling.

    We're all being told to cut back on meat portions and increase salad, side dishes, veggies and fruit. Have you looked at those 5 ingredient recipes?

    We do enjoy cooking together a lot. I have seen some of the five ingredient meals, but for the most part they seem to have some kind of cream of something soup or some other shortcut food, a major no no with my son's allergies. I do find some that work though on occasion. Because DD is on a prediabetic diet we cannot cut down on protein portions and replace them with more carbs.

    tried to forward a link to Mayo Clinic's list of veggies for diabetics, but was unsuccessful. Many are exotic/ethnic, easily available like bok choy for example which offer opportunities for new ideas. Substituting your own, home made sauces/salad dressings using a sugar substitute, healthy fat like extra virgin olive oil [EVOO], skim milk and fresh herbs is interesting. Would your DKs be willing to take on the challenge of growing/caring for an herb garden-in-a-pot?
